Who really invented it?
Depending on who you ask, you’ll hear different names. There is no one undisputed inventor. This makes the origin story of the Reuben sandwich a classic example of how food culture evolves over time.
One popular theory points to Bernard Schimmel. He worked in the kitchen of his father’s Blackstone Hotel in Omaha, Nebraska. Bernard studied at École Hôtelière in Switzerland. In 1928, one of his father’s friends, Reuben Kulakofsky, played poker late into the night. he ordered a sandwich. Corned beef. Sauerkraut. It seems simple. Bernard did it. Hotel owner Charles Schimmel added it to the menu. He named it after Kulakofsky.
Kulakofsky is often credited as its author. But will he? Or Bernard? Bernard’s granddaughter Elizabeth Weil wrote an article for the New York Times in 2013. She believed that Bernard was the real inventor. She pointed to the timeline. It was Kulakofsky, not the chef, who provided the inspiration.
Then there’s Arnold Reuben. Restaurateur in New York. Food historian Francine Segan credits him with inventing the sandwich in 1914 at his restaurant of the same name. But look at the recipe. His version uses ham. Turkey. Swiss cheese. coleslaw. Russian dressing. Rye. It’s not the sandwich you ate today. Probably my cousin. But it’s not the Reuben Sandwich we know.
Andrew Smith speaks from a different perspective. He cites the 1941 cookbook “Menu Making for Professionals in Quantity Cookery.” Author J.O. Dahl lives in New York. Smith believes this proves its New York origin. However, the Douglas County Historical Society in Nebraska still has a 1934 Blackstone Hotel menu. Reuben is listed there. They claim that Nebraska is their true home. In 2013, the City of Omaha declared March 14th as Reuben Sandwich Day.
The movie “Quiz Show” adds even more confusion. A character suggests the inventor as “Reuben Kay”. Short form of Kulakofsky. It’s a neat plot device. This is not necessarily historical.
Can You Make It Vegan or Kosher?
Yes. But you have to change the rules.
The standard Reuben sandwich You can serve it with nondairy cheese、とろけるような味わいを再現することもできます。 It satisfies the law。 It still tastes like a sandwich。
Vegan versions are everywhere now。 Roasted beet? Jackfruit? Mushrooms? They swap out the corned beef。 You use nondairy butter。 Nondairy cheese。 The result is close。 Not perfect。 But close enough for many。
Cured。
Tangier。
Kraut。 Dressing。
A date。
