This raw helva is different. It’s very simple. Honest. And it’s less work than scrolling through recipes that claim to be “easy” but take three hours to chop. We’re talking no-bake, gluten-free, vegan-friendly treats that actually taste like something you’d buy at a high-end health food store.

List of ingredients
No need for exotic spices. No need for refined white sugar. The taste comes from the quality of the basic ingredients.
- Raw Sesame Seeds: 1.5 cups. If you want a unique, fresh, nutty flavor, don’t use roasted seeds. Baking (or pre-baking) later in the process changes the shape significantly.
Coconut oil: 3 tbsp. It is solid at room temperature. This gives the helva its snap.
Dehydrated coconut: 0.5 cup. It adds texture and a hint of sweetness. - Medjool Dates: Five large dates. Pitted and soaked. These are your sweeteners. They hold everything together.
Fillings
If plain sesame seeds or dates seem too rustic, you can use toppings. It adds depth to the chocolate without the bitterness of cocoa powder.
- Cocoa powder: 0.5 cup. No added sugar.
- Agave nectar: 0.5 cups. A liquid sweetener that is easy to mix.
Coconut Oil: 0.25 cup. Keep the topping fluffy, not hard.
How to make Raw Helva (step by step)
This process relies on one tool: a food processor or a high-speed blender. If you don’t have one, please stop reading. You’ll be stuck with a chunky mess.
Step 1: Prepare for the Date
You can’t just throw dried dates into a blender and expect them to turn into puree. They will chew on your blades. Soak 5 Medjool dates in warm water for about 10-15 minutes. Drain them. You want it to be fluffy and soft, not watery.
Step 2: Basic Mixing
Add 1.5 cups raw sesame seeds, 3 tablespoons coconut oil, 0.5 cup desiccated coconut, and soaked and drained dates to a food processor.
